I am posting my software choice, maybe it is useful to others. I hope others will do so as well ;).
- Text editing: TextMate (bundles for many languages, version management systems, etc)
- Office suite: iWork 2009 (lightweight, but complete)
- Photo management: Aperture (the professional replacement for iPhoto)
- Photo editing: Pixelmator, some Photoshop. Pixelmator is really nice, since it can apply many effect live by leveraging power of modern GPUs.
- DTP: iWork (pages) or InDesign
- Web browsing: Chrome development builds, with the adblock extension
- Codecs: Perian (you should really get this one, FLOSS, and plays almost everything), flip4mac (for some Windows media files)
- UNIX goodness: MacPorts (FLOSS)
- Backups: Time Machine (included with OS X)
- Newsreader: Unison
- Equations: LaTeXIt (FLOSS)
- Version control: GitX (FLOSS)
